Rainy days and roast






The title may not say much but I thought it sounded cute:) it's Saturday and I love Saturdays not as much as I love fridays but I still love Saturdays more then Sundays! Kids woke up early as usual! It was raining very heavily and was a perfect setting for a Saturday! I was debating between a crepe and pancake with strawberry! Decided on the crepe as i dont like the fluffy pancakes. Made the crepe followed a recipe from Nigella's and served it with strawberry cooked with some sugar and butter! Perfect! Kids ate them up quickly and rushed to watch Tangled!  I was happy! Then I planned for lunch and Jaimie Oliver's Rosemary roast chicken came to mind. Its a simple, quick recipe, do try it. I am one of those who's too lazy and indisciplined to follow a recipe through and through! So I got a free range chicken or some higher grade chicken of 1.5 kg or so, wash and pat it dry? Massage it generously with salt, black pepper and olive oil and left it alone. I cut 2 large carrots in chunks. At the same time I boiled 4 large sized potatoes with a lemon!  I stuff the chicken with a whole lemon, garlic, onions and Rosemary. I roasted for about 1 hour and 40 minutes. Cut the 3/4 boiled potatoes into wedges and toss them with the chicken for the last 1/2 hour of cooking. How do you know the chicken is cooked.I took a knife and poked at the thickest part of the chicken and if the water runs clear then the chicken is cooked.  Remove the chicken, potato and the carrot, let them sit for 10 minutes before serving. You will be left with lovely juices in the pan with some onions and garlic. I use a fork and mash it up, and then strain the juices for gravy for the chicken and vegetable. This recipe is definitely a keeper. Family ate them. I devoured them!
